Loaded Potato Jackets

Hello Friends,

Welcome back. Today’s recipe is a starter which is simple to prepare, looks delicious and tastes great. This is a vegetarian starter and whenever I have served this to my guests there have been requests for the recipe. Hence I thought I would share this recipe with all my friends today. Do try it and let me know your comments in the section below. Enjoy and relish it.

PS- This dish can even be made with chicken instead of paneer. Just substitute paneer with cooked chicken.

Recipe (Serves 6)

Ingredients

  1. Small to medium size potatoes- 6 nos
  2. Onion- 1 nos, chopped finely
  3. Bell pepper (Capsicum)- 1 small, cut into small cubes
  4. Tomato- 1, cut into small cubes
  5. Garlic- 2 small cloves, chopped finely
  6. Super sweet frozen corn- 1 cup
  7. Cottage cheese (paneer)- 100 gms, cut into small cubes
  8. Salt to taste
  9. Egg-1 (optional)
  10. Butter- 1 tbsp
  11. Olive oil/ Any cooking oil of choice- 3 tbsp
  12. Grated mozzarella cheese- 1 cup

Mix together in a bowl-

  1. Tomato ketchup- 1 tbsp
  2. Chilli garlic sauce- 2 tbsp
  3. Hot sauce/ Sriracha sauce- 1 tbsp
  4. Pepper pwd- 1/2 tsp
  5. Dried oregano- 1/2 tsp

Method

Step 1. Wash potatoes and scrub them properly. Keep the skin. Parboil them taking care not to make them too soft.

Step 2. Cut potatoes in half each and scoop out around 50%. There should be a thin layer remaining with skin to make it like a cup.

Step 3. Melt butter and add salt and pepper pwd. (If using egg, beat egg with salt and pepper pwd and add melted butter,  mix well). Add a little more salt as potatoes are without salt and we will be rubbing this mixture into them.

Step 4. Spoon some butter mixture into each potato and rub it in properly. Grill for 10 mins in hot oven.

Step 5. Heat 1 tbsp oil in a pan. Add cottage cheese (paneer) cubes and fry for a minute. Remove. Add 2 tbsp oil and add onion and garlic, saute for 2 mins on high heat. Add tomatoes and bell pepper (capsicum) and saute for 2-3 mins. Add sweet corn and paneer and saute for another 2 mins. Season with salt. Add the Mixed sauces and mix well. Remove from heat.

Step 6. Fill each potato with the mixture and top with cheese.

Step 7. Grill in preheated oven for 10 mins till cheese starts browning. Serve hot with your choice of sauce or chutney.

    I tried this dish on my kid’s birthday. We all love potatoes and paneer so it was a perfect combination of our 2 favs. It turned out soooooo good. Worth trying!
