Mutton Leg Roast | Masala Raan

Hello friends,

This recipe if for the dry style roast, the sauce on the side adds to the flavor.

Ingredients

1. Mutton Leg- 1 kg

2. Hung Yogurt- 1/2 cup

3. Ginger Garlic paste- 2 tbsp

4. Coriander Leaves- 1 cup, chopped

5. Mint Leaves- 1 cup, chopped

6. Vinegar- 2 tbsp

7. Butter- 1/2 cup/ 7 tbsp

8. Oil- 1/4 cup/ 4 tbsp

9. Black Pepper pwd- 1/2 tsp

10. Tandoori Masala- 2 tsp

11. Red Chilli pwd- 2 tsp

12. Dhania pwd- 3 tsp

13. Cumin pwd- 1 tsp

14. Garam Masala pwd- 1 tsp

15. Salt to taste

Method

Step 1. Wash and pat dry the mutton leg with a tissue. Ensure it is completely dry.

Step 2. Make small and deep incisions to the bone on both sides.

Step 3. Make a marinade by adding salt, black pepper pwd and 1 tsp ginger-garlic paste to the vinegar. Rub it in thoroughly on the mutton leg.

Step 4. Cover and let it marinate in the fridge for 2 hours.

Step 5. Prepare marinade by mixing together the hung yogurt, ginger garlic paste, dry spices, salt, 4 tbsp oil, 4 tbsp butter and chopped coriander and mint leaves. keep mixing till all ingredients are totally incorporated.

Step 6. Remove mutton leg from fridge after 2 hrs and rub in this marinade on it. Ensure all parts are covered.

Step 7. Marinate in fridge overnight or for 10-12 hrs.

Step 8. Wrap the mutton leg in parchment paper first and then aluminium foil.

Step 9. Bake in preheated oven at 160 degrees Centigrade for 1 hr-30 mins.

Step 9. Remove and immediately open it, spoon the balance butter on top. Put it back in the hot oven and bake for 30 mins on a higher temperature of 180 Degrees Centigrade.

Step 9. Remove from oven after done and cover it back with the parchment paper and foil. Keep covered for 20 mins before serving.

Step 10. Remove excess sauce from the baked raan and cook it to reduce it till little thick.

Serve the Mutton Leg Roast with the sauce as an accompaniment.
