Khoya Sevai






Ingredients-
- Roasted Sevai (Vermicelli)- 1 pkt, 200 gms
- Pure Ghee (Clarified butter)- 1/2 cup
- Khoya (Mawa)- 1/2 cup
- Coarsely ground Almonds- 1/2 cup
- Cardamoms- 6-7 large, coarsely crushed with some sugar
- Saffron- A few strands
- Sugar- 1 cup + 2 tbsp
- Milk- 1 to 1-1/2 cup
- Water- 1 cup

Method-
This recipe is divided into 3 steps:
- Step 1- Make a sticky syrup with water and sugar, add half of the crushed cardamom and saffron. Keep aside.
- Step 2- Take 2 tbsp ghee in a pan, add the crushed almonds and khoya, fry for 2-3 mins, add 2 tbsp sugar, mix and keep aside.
Step 3- In same pan add balance ghee, fry the sevai till golden brown.
Add the balance cardamom pwd and milk, enough to soak all the sevai.
Cover and let cook for few minutes.
Open lid and add the sugar syrup. Mix and again cover with lid and cook for another few minutes.
Add the khoya mixture, mix and again cook covered for 1-2 mins.
Serve hot garnished with chopped nuts.
