Mom Style Tea Cake

This tea cake recipe I am sharing is a recipe inspired by my mom’s cake. She is no more with us today but I still miss the amazing cake she used to make with fresh cream. I have tried to come up with something that would taste similar, couldn’t get the exact taste though. Mom was an amazing cook and getting a taste anywhere near to her taste also is a big achievement for me. This cake turns out moist and grainy and tastes just amazing. Ingredients
- All-purpose flour- 2 cups
- Baking pwd- 1 tsp
- Baking Soda- 1 tsp
- Salt- 1 pinch
- Milk- 1/2 cup
- Vinegar- 1 tbsp
- Eggs- 3 large
- Sugar- 1-1/2 cups
- Butter- 175 gms (little less than 1 cup)
- Vanilla Essence- 1 tsp
- Long Life Cream- 1 tin (125 gms)
Method
Step 1. Add vinegar to milk, give it a good stir and keep aside.
Step 2. In a pan sieve all purpose flour, salt, baking pwd and baking soda.
Step 3. In a bowl beat eggs with hand blender till light and fluffy. Add sugar and beat till sugar dissolves. Add butter and essence and beat. Add cream and mix with spatula till everything is incorporated well.
Step 4. Add dry ingredients and fold in with spatula.
Step 5. Add the milk and vinegar mixture and fold it in.
Step 6. Pour in a greased pan of 8″ diameter and bake in preheated oven at 180 degrees C. for around 50 mins or till toothpick comes out clean when inserted.
Step 7. Invert on a cooling rack to cool. Serve with tea or coffee.
