Hello friends.

Frankies are a typical Bombay Street Food. It is loved by the young and old alike. Frankies can be made with mutton or chicken, for vegetarians it can be made with cottage cheese (paneer) or potato.

The main speciality of frankies is its flavor which is ‘chatpata’ as known in Bombay, which means it is a little spicy and a little sour at the same time. The combination of these flavors gives the frankies their special taste.

MAKES 6 FRANKIES

INGREDIENTS:

1. Boneless Mutton – 300 grams.

2. Onion – 1 medium chopped.

3. Vegetable oil – 1 cup approx.

4. Egg – 1 large / 2 small.

5. Wheat flour (atta) – 1 cup.

6. All Purpose Flour (Maida) – 1 cup.

7. Yoghurt – 2 Tbsp.

8. Ginger Garlic Paste – 2 Tsp.

9. Vinegar – 1 Tbsp.

10. Pepper Powder – 1/2 Tsp.

11. Red Chilli Powder – 1/2 Tsp.

12. Cumin Powder – 1/4 Tsp.

13. Coriander Leaves – 1 small bunch.

14. Lemon Juice – 1/2 lemon.

15. Garlic – 5 cloves.

16. Cumin Seeds – 1/2 Tsp.

17. Green Chillies – 8 to 10 nos.

18. Tamarind Ball – 2 inches.

19. Salt – to taste.

METHOD

PREPARING INGREDIENTS

Step 1. Make dough. mix together wheat flour and all purpose flour. add salt, yogurt and oil. add enought water to make a stiff dough. Keep aside for an hour.

Step 2. Prepare mutton. Add salt, pepper pwd, ginger garlic paste and vinegar to mutton, add 1/2 cup water, cover and let cook on low heat for 15 mins or till done.

Step 3. Prepare chutney. Grind coriander leaves, green chillies, cumin seeds, garlic cloves, lemon juice and salt. Keep aside.

Step 4. Prepare onion mixture. Soak tamarind in warm water for an hour. Squeeze and remove thick pulp. Add around 3 tbsp tamarind pulp in onion, season with salt. Add cumin pwd and red chili pwd. Mix and keep aside.

Step 5. Beat egg with little salt and keep aside.

Step 6. Divide dough into 6 balls. Roll out each into a 6″ to 7″ diameter flatbread. Keep aside.

COOKING AND ASSEMBLING

Step 7. Roast flatbread on one side on hot griddle, once underside is semi cooked turn around. Cook for a minute, then pour 1 tsp of oil on it and add 1 tbsp of beaten egg. Flip around and cook for a few seconds then flip around again and remove. Do the same with all 6 flatbread.

Step 8. Divide cooked mutton into 6 parts. Add 1 tsp chutney on one side of flatbread and 1 tbsp onion on other side. Add 1 part of mutton on top and roll the frankie firmly. Do the same stuffing and rolling with all 6 frankies.

Step 9. Fry all frankies evenly on all sides.

Serve hot.
