Hi friends,

Welcome back. I know its been a while but now Im back with my new recipes :). Shahi Tukde is a dessert which is prepared in many ways, this is my version of the popular dessert. Looking forward to you all trying it and I can assure you, you wont be disappointed :). Do leave you comments in the section below.

Shahi Tukde

There are three parts to this recipe:

1. Rabdi

2. Sugar Syrup

3. Bread

Part 1:

Rabdi Ingredients

  1. Full fat milk- 1 lt
  2. Full fat milk pwd- 1 cup
  3. Khoya- 150 gms
  4. Condensed milk- 125 gms
  5. Chopped nuts like almond, pistachios, cashewnuts- 1/2 cup
  6. Cardamom pwd and Saffron to taste

Method

Step 1. Mix the milk and milk pwd well.

Step 2. In a wide wok heat the milk and milk pwd mixture on high flame till it comes to a boil. Keep stirring in between.

Step 3. Lower heat to medium low and let the milk boil till a layer of cream forms on top. Take a spoon and gently gather the cream and stick it to the side of the wok. Continue doing this for around 20 mins till the milk has reduced to around half.

Step 4. Scrape the cream from the sides and add to the milk. Add the nuts, cardamom pwd, saffron and crumbled khoya in the milk and keep stirring and cooking for 5 more mins.

Step 5. Add condensed milk and stir for a min more and turn off the flame. Let cool.

Part 2:

Sugar Syrup Ingredients

1. Sugar- 2 cups

2. Water- 1/2 cup

3. Cardamom  and Saffron to taste

Method

Step 1. Add water and sugar and put to boil stirring till sugar dissolves.

Step 2. Keep stirring and letting it boil till it is sticky (1 thread consistency).

Step 3. Add cardamom pwd and saffron to taste. Cool.

Part 3

Ingredients

1. Large bread slices- 10 nos

2. Pure ghee (Clarified butter)- 1 cup approx

Method

Step 1. Cut edges of bread and cut into 2 diagonally.

Step 2. Spread ghee on both sides of bread and fry all in a pan till crisp and brown.

(We normally deep fry but this is a healthier option as it uses less ghee.)

Step 3. Arrange in tray. Spoon sugar syrup on all slices till soaked properly. Keep aside for 10-15 mins.

Step 4. Take 1 cup rabdi and add 1/4 cup milk in it. Mix well. You can add a tbsp of sugar syrup in it f you want it sweeter but there is sugar in the bread too so be careful about adding additional sugar.

Step 5. Pour this thin rabdi mixture on the bread slices and bake in preheated oven at 180 degrees C. for 10 mins.

step 6. Remove from oven and spoon rabdi over the slices and serve garnished with chopped nuts.
